Butternut Squash, Beans & Spinach Quesadillas Recipe

Probably the healthiest quesadillas you ever had!

Ingredients:

  • 3/4 cup chicken stock
  • ¾ cup chicken stock
  • 3 cups chopped butternut squash 
  • 1 can red beans
  • 1/2 tsp cumin
  • ½ tsp chili powder
  • ½ tsp paprika
  • ¼ tsp cayenne pepper
  • 6 slices of canned jalapeños 
  • 4 oz. cream cheese 
  • 2 cups fresh spinach leaves
  • Pepper to taste
  • Salt to taste
  • 2 whole wheat tortillas
  • 1 cup shredded Mexican cheese
  • 1 avocado
  • 1 tsp garlic powder
  • ½ tsp chili flakes

Instructions:

  • Preheat the oven to 400 degrees
  • Chop the butternut squash
  • Heat the broth and add the butternut squash. Cook covered for about 10 minutes.
  • Add the red beans, spinach leaves, chili powder, cumin, paprika, cayenne pepper, chopped jalapeño slices and mix well to combine.
  • Add the cream cheese and mix again over medium heat for another 2 minutes, the cream cheese will melt as you stir.
  • Now you can assemble the quesadillas. Place on tortilla onto a baking sheet (previously spread with olive oil), spread with the butternut squash filling, sprinkle with cheese and top with the second tortilla.
  • Place in the oven and bake for about 10 minutes until slightly golden.
  • Meanwhile, let’s prepare the guacamole. Cut, pit and scoop out the avocado. Add the garlic, salt and chili pepper flakes and mash with a fork.
  • Take the quesadilla out of the oven and slice it like a pizza!
  • This super healthy quesadilla is to die for! Serve immediately with the guacamole!
