Couscous with Dried Fruits and Pistachios Recipe

Yields: 2-3 servings | Total time: 20 minutes

A yummy couscous made of fun spices and great textures!

Ingredients:

  • 2.5 oz. water
  • 1 cup chopped carrots
  • 2.5 oz. couscous
  • Lemon zest (1/4 lemon)
  • ½ cup chopped parsley 
  • 1 cup dried cherries 
  • 1/3 cup pistachios 
  • 2 Tbsp. olive oil 
  • 1 teaspoon cinnamon
  • Salt and pepper to taste

Instructions:

  • Bring the water to a boil and add the couscous in the pot. Remove from the heat, set aside and cover with the lid or a small plate.
  • When all the water is absorbed (10 minutes), add the couscous to a mixing bowl and stir with a fork.
  • Add the chopped carrots, the cherries, the lemon zests, the chopped parsley, the pistachios, salt, pepper, cinnamon and olive oil.
  • Mix well to combine and ENJOY!




Couscous is a healthy carb that will shut the hunger hormone called ghrelin. That’s cool!
Feeling bloated? Go for parsley, it has a great diuretic effect!
