Couscous with Dried Fruits and Pistachios Recipe

Yields: 2-3 servings | Total time: 20 minutes
A yummy couscous made of fun spices and great textures!
Ingredients:
- 2.5 oz. water
- 1 cup chopped carrots
- 2.5 oz. couscous
- Lemon zest (1/4 lemon)
- ½ cup chopped parsley
- 1 cup dried cherries
- 1/3 cup pistachios
- 2 Tbsp. olive oil
- 1 teaspoon cinnamon
- Salt and pepper to taste
Instructions:
- Bring the water to a boil and add the couscous in the pot. Remove from the heat, set aside and cover with the lid or a small plate.
- When all the water is absorbed (10 minutes), add the couscous to a mixing bowl and stir with a fork.
- Add the chopped carrots, the cherries, the lemon zests, the chopped parsley, the pistachios, salt, pepper, cinnamon and olive oil.
- Mix well to combine and ENJOY!
