Southwest Quinoa

Southwest Quinoa Recipe

Yields: 8 servings | Total time: 25 minutes

Clean eating never tasted so good. It’s loaded with foods that pack a nutritional punch – quinoa, corn, black beans, red pepper, green onion, and cilantro.

Ingredients:

  • 2 cups cooked quinoa
  • 1 can red beans
  • 1 red bell pepper
  • 1 lime juiced
  • 1 tablespoon cumin
  • 2 tablespoon olive oil 
  • 1 can of corn
  • 1 cup cherry tomatoes
  • 1/2 cup cilantro
  • 1 green chili pepper

Instructions:

  • Follow the instructions on the package to cook the quinoa
  • Chop the red bell pepper and the chili pepper, and cut the cherry tomatoes in half
  • Add the tomatoes, red bell pepper, chili pepper, beans, corn, cooked quinoa, lime juice, cumin, olive oil and chopped cilantro to a nice serving dish. Mix to combine, wow the colors and it smells so good!
  • Serve warm or cold
