
Southwest Quinoa Recipe

Yields: 8 servings | Total time: 25 minutes
Clean eating never tasted so good. It’s loaded with foods that pack a nutritional punch – quinoa, corn, black beans, red pepper, green onion, and cilantro.
Ingredients:
- 2 cups cooked quinoa
- 1 can red beans
- 1 red bell pepper
- 1 lime juiced
- 1 tablespoon cumin
- 2 tablespoon olive oil
- 1 can of corn
- 1 cup cherry tomatoes
- 1/2 cup cilantro
- 1 green chili pepper
Instructions:
- Follow the instructions on the package to cook the quinoa
- Chop the red bell pepper and the chili pepper, and cut the cherry tomatoes in half
- Add the tomatoes, red bell pepper, chili pepper, beans, corn, cooked quinoa, lime juice, cumin, olive oil and chopped cilantro to a nice serving dish. Mix to combine, wow the colors and it smells so good!
- Serve warm or cold
