Vegetable Stir Fry Recipe

Spicy, protein-packed, and a healthier spin on takeout!
Ingredients:
- 2 cloves of garlic
- 1 Tbsp. ginger
- 1 Tbsp. olive oil
- 1 Tbsp. toasted sesame oil
- 2 cups broccoli florets
- 3 cups kale, washed and cut coarsely
- 6 mushrooms (any kind), diced
- 1.5 cups rice noodles, cooked
- 1 cup firm tofu, diced
- Soy sauce to taste
Instructions:
- Peel and mince the garlic and the ginger
- Slice the mushrooms, chop the broccoli and shred the kale
- Follow the instructions on the package to cook the rice noodles
- Heat a pot over medium heat and add 1 Tbsp. olive oil
- Add all the veggies, the garlic, the ginger and stir fry for about 3-4 minutes
- Add the tofu and the soy sauce and stir well to combine
- Add the sesame oil and stir fry for another 5 minutes
- Finish by adding the cooked noodles and stir fry until heated through, about 1 minute
- Serve immediately. This stir fry is a yummy plant-based dish!
